Available in five languages, the display guides you through every stage of the production cycle—showing real-time temperature, mixture consistency, and remaining time—ensuring precise control of the entire process.

Equipped with five internal sensors and intelligent software, Leonardo Plus monitors and manages key production variables: cooling progress, blade rotation speed, gelato consistency, micro ice-crystal formation, and overrun. Leonardo Delux All In One
Ice-cream Batch-freezer With Integrated Boiler

Leonardo Deluxe is an advanced version of the Leonardo Plus, enhanced with an integrated boiler. This powerful machine is your all-in-one solution for preparing not only gelato, but also pastry creams, jams, and sauces.

The batch freezer and boiler can operate simultaneously for efficiency, or independently, depending on your needs.

Its user-friendly interface, available in five languages, allows you to easily select a production mode or recipe—giving you more time to focus on other tasks in your lab.

How will it help you?

With 14 customizable boiler recipes, Leonardo Deluxe automatically adjusts heating temperatures for consistently perfect mixtures. One standout program is “Gelato Top,” which stirs the mix at high speed while reducing the temperature from +4°C to -4°C. This process incorporates more air into the mixture, achieving maximum overrun and a creamier gelato.

Plus, Leonardo Deluxe includes a variety of additional smart programs designed to simplify and enhance your production.

Cortina Pasteurizer

What is it?

The Cortina Pasteurizer is a versatile, high-performance machine designed to blend, cook, pasteurize, cool, ripen, and preserve a wide variety of mixtures with maximum safety and precision. Ideal for gelato artisans, pastry chefs, chocolatiers, and kitchen professionals, it brings advanced technology to your laboratory.

Available in 60, 60+60, 120, and 180-liter capacities, it utilizes a gentle bain-marie system for both heating and cooling processes. The intuitive electronic display allows you to easily select and manage your preferred recipes.

How will it help you?

With the Cortina Pasteurizer, you can effortlessly prepare gelato bases, yogurt mixes, chocolate and nut spreads, and more. Choose between high pasteurization (85°C) or low pasteurization (65°C) based on your needs. Once the pasteurization cycle is complete, the machine automatically cools the mixture to +4°C, ensuring safe and optimal preservation—fully automated from start to finish.

Tornado Mixer

What is it?

Tornado is a mixer essential in any artisan laboratory. It has a powerful cutting action which allows you to use from 2 to 30 liters; it is equipped with a head with which you can obtain mixtures with a high degree of micronization.

Tornado allows you to separate frozen fruits, emulsify fatty pastes rich in oil, make any kind of mixture fine and silky, increasing its overrun and giving gelato the finest and palatable structure.
